The “Salsa di Pera Picciola al Rafano” is a combination of the puree of the “Pera Picciola” – a pear variety that grows near Siena on the Monter Amiata, at an altitude of about 880 meters above sea level – and horseradish (Armoracia rusticana L.). This culinary-daring but excellent combination makes this product unique with boiled meat or tartare. We also recommend it as a sauce in the basic recipe: salsa + olive oil + parmesan.
