Harvest period/harvest method: During the third fortnight of October/ mechanical and manual harvesting carried out exclusively on the plant. Immediately after harvesting, the olives are transported to the mill in perforated boxes and processed immediately
Organoleptic profile
Colour: Light green with fleeting golden veins
Fragrance: Enveloping, medium fruity with intriguing notes of resins and conifers, with hints of walnut and green grass
Taste: A dry, clean and sweet entry with notes of green almonds and artichokes, followed by a subtle, bitter note of thistles and wild chicory and a subsequent, spicy finish.
