“Orange Marmalade from the Sorrento Peninsula”
This orange jam is not only distinguished by its origin, the “Sorrento Peninsula”, but above all by its intense aroma and perfume, as well as a color of the natural orange fruit, because it is made up of small pieces of pulp and peel.
This orange jam is free of preservatives, colorants, correctors, thickeners.
Composition: only Sorrento oranges and sugar
Fruits used: at least 85 gr. of fruit per 100 gr
Origin of raw materials: Sorrento oranges are grown on the “Sorrento Peninsula”
Guarantee and certification marks: Italian and European (consortium, dop …)
The orange jam is produced in compliance with the health and hygiene requirements of Legislative Decree 155/97 (manual for company self-control).
Details of the production method:
– Selection of the best Sorrento oranges, free from pesticides and free from chemical residues
– Washing with running water and natural drying
– Hand peeling, cutting into pieces and removing seeds
– Cooking for about an hour with only the addition of sugar
– Preservation in sterile jars. Sterilization by boiling the jars
– Jam production time 3/4 hours
– Shelf life: 18 months
– Storage: cool place or refrigerator as the product is free of preservatives
Gastronomic recommendations: in all sweet gastronomy, aged cheeses and ricotta
Example: “Tarte” with the scents of Sorrento
Ingredients: 70 gr. butter, 80 gr. extra virgin olive oil, a pinch of salt, 150 gr. sugar, 1 whole egg and 2 egg yolks, a sachet of vanilla yeast, 50 g of potato starch, 200 g of flour, Sorrento orange, lemon and mandarin jam.
Processing: work the eggs and sugar well, add the salt, butter, oil and finally the starch and flour, mix with the yeast. Pour 3/4 of the mixture into a greased and floured baking dish. Cover with the three jams and divide into 3 different wedges. Cover with the remaining dough and spread evenly with the help of a spoon. Bake for 40 minutes at 180 degrees. Sprinkle with powdered sugar.
