Description
The “Itrana olive” from Lazio has been better known for years as the “Oliva di Gaeta” because the port of this city was for centuries the main export point from which this phenomenal product reached tables all over the world. Most of the production is still produced in the surroundings of Itri, in the “Pontine Plain”, and in it the hilly landscape enjoys the sea breeze from the sea just a few kilometers away.
Organoleptic characteristics
These olives are characterized by their unusual pink color, their soft consistency and their particularly intense and persistent flavor. To maintain this unmistakable flavor, which is very light and very pleasantly bitter, they are kept in brine after their late harvest (in late winter).
Gastronomic recommendations
Delicious to eat alone, they are excellent for enriching any sauce, but especially for an authentic puttanesca sauce. However, their use is varied, from salads to the preparation of fish and meat. In any case, we would like to point out the recipes of cod with cherry tomatoes and capers or with potatoes, both seasoned with our black olives from Gaeta. But they also offer a tasty component that goes well with tuna and fresh vegetables.
