Pecorino Romano DOP is a hard and cooked cheese, produced with whole sheep’s milk from flocks raised in the wild and fed on natural pastures.
Flavor, aroma, consistency, nutritional energy values, everything in Pecorino Romano is perfectly balanced, harmonious, balanced. And even the Roman legionaries knew this well, who always added an ounce of pure sheep’s cheese to their daily ration of spelt to regain strength and energy before going into battle.
The origins of Pecorino Romano DOP date back to the time of the Roman Empire: the processing method, very similar to the current one, was described by Varro, Columella (De Agricultura), Virgil (Georgiche) and Pliny the Elder. From 227 BC it also spread to Sardinia, where identical environmental and breeding conditions existed.
