This wine is the purest expression of the Laure vineyard, in the hamlet of San Paolo di Tufo.
Straw yellow wine with golden reflections.
On the nose it is intense and complex: it releases delicate iodine and flint notes, with hints of wild fennel, thyme and Mediterranean scrub. In the mouth it is enveloping, broad and intensely mineral, with a predominant acidic shoulder that distinguishes it from other crus.

Winemaking techniques:
Selected vineyard and vinified separately.
For this Greco cru we use only the best part of the free-run must. It is carefully fermented in stainless steel tanks at a controlled temperature, using selected native yeasts. The wine rests on the lees for 9 months to give complexity and structure. The malolactic transformation occurs partially, depending on the natural acidity of the harvest. Before being bottled, the wine is lightly filtered and stored at cellar temperature for a year, before being released onto the market.
Pairings:
The freshness and flavor of this wine mean that it pairs very well with fatty dishes. Ideal with seafood, grilled fish and fresh cheeses but also with more structured dishes such as white meats in sauce.
