Winemaking techniques:
Selected vineyard and vinified separately.
For this Greco cru we use only the best part of the free-run must. It is carefully fermented in stainless steel tanks at a controlled temperature, using selected native yeasts. The wine rests on the lees for six months to give complexity and structure. The malolactic transformation occurs partially, depending on the natural acidity of the harvest. Before being bottled, the wine is lightly filtered and stored at cellar temperature for a year, before being released onto the market.
Pairing:
The freshness and flavor of this wine make it pair very well with fatty dishes. Ideal with seafood, grilled fish and fresh cheeses but also with more structured dishes such as white meats in sauce.
