“Fiano di Avellino D.O.C.G.” – Cantine di Marzo dal 1647

Produced in 6000 bottles per vintage. In one of the vineyards where our Fiano comes from, the traditional radial training system is still used, which consists of crossing the branches of two vine stocks planted in pairs. This system, now in disuse, can bring nice surprises in terms of yield and quality of the grapes produced.

Winemaking technique:
Only the best free-run must is used for this selection of our Fiano. It is fermented with great care in stainless steel tanks at controlled temperatures using selected yeasts. The wine then rests on the lees for six months, to give complexity and structure. The malolactic transformation occurs partially depending on the natural acidity of the harvest. Before being bottled, the wine is lightly filtered and stored at cellar temperature until it is deemed ready for the market.

Organoleptic description:
The wine is crystalline, straw yellow with greenish reflections. Intense and complex on the nose, with notes of lime, jasmine, pear and passion fruit. A fresh and quite savoury wine, which releases delicate notes of citrus, flowers and honey on the palate. Extremely seductive, it remains easy to drink despite its complexity.

Pairing:
Ideal as an aperitif. Particularly appropriate with sushi and raw fish in general, white meats as well as exotic cuisine.

Serving temperature: 10-12 °C
