Parmigiano Reggiano DOP is a cheese defined as follows: “hard paste” and long (sometimes very long) maturing. The percentages of its nutritional values ​​describe it very well: in fact, it contains only 30% water and 70% nutrients, including calcium, magnesium, proteins, vitamins and minerals.

The milk contained in Parmigiano Reggiano is collected at two distinct times of the day: in the evening and in the morning. The evening milk is taken to the dairy and placed in tanks for surfacing, inside which the fat part of the milk rises to the surface during the night and is skimmed the following morning. The milk collected in the morning, however, is not skimmed but is poured directly into the copper boilers for processing.

The quality of the milk is so high that it can be used raw, that is, at temperatures that do not exceed 55°C, therefore lower than the pasteurization temperature that goes over 70°C. Raw processing allows all the nutritional properties of the milk to be kept intact, as well as its precious lactic bacteria.

Between 27 and 34 months, Parmigiano Reggiano reaches a particularly grainy and dry consistency; when tasted, you can perceive hints of dried fruit, the aroma of meat broth and spices such as nutmeg.
