Parma ham is a D.O.P. product that is extremely controlled, governed by a long and rigid production process that ends with a careful examination and with the ducal crown branded into it. This marking is the unmistakable sign that distinguishes it: an offer of guarantee and safety for the consumer, which certifies the absolute excellence and authenticity of the product.

What makes San Giacomo raw ham special?
Low fat, high mineral salts, vitamins and easily digestible proteins make Parma Ham a food suitable for everyone: a product of absolute excellence that sublimates the best characteristics of pork legs.
80% of the production is done exclusively by hand by true master craftsmen: everything starts with careful trimming, then moves on to salting, done by hand by the master salter who carefully sprinkles the legs with the right amount of coarse sea salt. After the salting phase, the hams are washed from excess salt, and begin the curing process hanging in cells where they remain for 20 months: every month they are turned over manually.
A particular aspect of Parma hams is the double greasing: the hams are sprinkled with lard twice, at the beginning of the curing process and after about 10 months, this operation is essential for the success of the final product.
