Harvest: by hand in 15 kg boxes
Vinification technique: soft pressing, with half of the pressed mass subjected to a maceration process in contact with the skins in a steel tank for a month. The second half is vinified without the solid components of the grape. After a month, the two masses are brought together and refined together in steel tanks at a controlled temperature, using selected neutral yeasts.
Aging: another 12 months in steel on the fine lees and 6 months in the bottle

Organoleptic characteristics: lemony and floral, with elegant, mineral and spicy iodine notes. The balsamic and undergrowth enhance its great freshness and incomparable length. Opulent on the palate, but at the same time vertical, a wine with balanced complexity.
This noble white wine is ready to be enjoyed and delighted, but it is also recommended for long storage!
